The limited processing technology and agricultural marketing of salak fruit, causes the decline rate of interest of farmers to cultivate salak fruit in the East Kalimantan Province. So to anticipate the situation, necessary food processing technologies should promote, which can increase the value and diversification of salak fruit. The purpose of this study was to assess the processing technology of salak fruit and its economic analysis. The study was conducted in 2013 at the Karang Joang Village, Sub-District of North Balikpapan, Balikpapan City, East Kalimantan. Data types consisted of primary data and secondary data. The data collection techniques were interviews and direct field observation. To know the preferences of the panelist's organoleptic tests and economic analysis were conducted. The results showed preference of panelists to salak pickle was very much and super like. The increase farmers' income due to the processing of salak fruit was ensured by determining the R/C ratio of each processed food commodities of salak. The value of R/C ratio of pickles and syrup salak was 2.22 and 1.58, respectively. Diversification of Salak can be increased through making different processing food items such as pickle, sirup, and creating competitiveness of products, ultimately which will increase the value of Salak and resilience of food support in the East Kalimantan Province.
