Pineapple is one type of fruit that many people enjoy doing a lot because it's cheap, accessible, relatively high nutrient content, beneficial for the human body and easily cultivated. Production of pineapple in East Kalimantan each year has increased so that with these improvements need to be followed harvesting technology, post-harvest handling, and product diversification to increase value added, competitiveness product and farmers' income. The purpose of this study is to provide information regarding the diversification of processed pineapple products to support food security in East Kalimantan. The research was conducted in the village of Bukit Raya, Samboja Sub-District, Kutai Kartanegara District, East Kalimantan Province, in 2011. This location is one of the production center pineapple production is still largely sold in fresh form. The results showed that the diversification of products processed pineapple is cultivated in the study sites include pineapple jam, candied fruit, pineapple lunkhead, nata de pina and pineapple fiber. With the prospect and potential of processed pineapples were produced at the site, capable of achieving food security in a sustainable manner in East Kalimantan.
